Ninki-ichi Fresh Aging Junmai Daiginjo
Junmai DaiginjoThis is a Junmai Daiginjo sake called “Jukusenshu” that retains the wonderful flavor of “freshly squeezed” sake while adding a more cohesive flavor through “aging.”
In order to preserve as much of the freshly pressed ingredients as possible, the sake is cooled to -3 degrees immediately after pressing and then bottled.
The sake is then pasteurized at 63 degrees (low-temperature sterilization with a hot water shower)
and aged in the bottle.
The sake’s gorgeous, fruity flavor goes perfectly with fresh appetizers. Try serving it chilled in a wine glass to enjoy its characteristics even more.
