Junmai GinjoCertified organic in Japan,Canada (which has equivalence in the USA and Taiwan), and the EU.
It is fermented in traditional wooden tanks, pressed,
then bottled after low low-temperature pasteurization.
The result is refreshing and not overly rich, with a good
balance of sweetness and dryness. The moderate flavor
is perfect for mealtimes.

To make real, proper sake, no effort can be spared. We take are time and do not cut corners. We use wooden tools,a traditional Japanese steaming cauldron, trays for koji-kaking, and respect the traditional craftsmanship of the tools by not using more efficient versions.
