Some grapefruit, a bit of honeysuckle and some iodine when its young evolve to a jammy candied repertoire of white flesh fruits and spicy tobacco leaves on a mineral base when given the opportunity to age.

Food Pairings: All that richness pushes the limits of both the type of food you will be able to serve and the complexity of the recipes. You can try poultry with morels, salmon with a smooth sorrel dressing or maybe some scallops cooked in their shells with some cream and foie gras, they are perfect matches. You can also go for a white sauce veal stew or a homemade canard à l'orange.
