Enhances the freshness of the fish; recommended with prawn tartare and lightly elaborated second courses. Also excellent with light first courses based on vegetables and white meats cooked at low temperatures. It is also surprising at the end of the meal, together with fruit-based parfaits and cheesecake.

It closes fresh with light citrus notes.
